Cocktail Ice Blocks Recipe

The sun is shining and we're feeling hot so it's the perfect time to chill out on a summers evening with these just-for-grown-ups frozen treats. Plus, these instant refreshments are really easy to make!
Makes: 8 small, 4 large
Ingredients:
300g blueberries
65ml elderflower cordial
250ml sparkling water
65ml gin (we like Hendrick's)
Method:
- In a blender, whizz together blueberries, elderflower cordial, sparkling water and gin. Pour into ice block moulds and freeze overnight.
- To unmould, dip briefly in boiling water.
