Mini Caprese Salads

These wonderful (and wonderfully simple to make!) appetisers were part of the 'My Foodbag' that I got for Christmas - a great idea and too easy not to share!
Ingredients:
15 mini mozzarella balls
15 toothpicks
15 basil leaves
1 punnet cherry tomatoes, cut in half
Just take a mozzarella ball and slice off a piece so the ball sits flat on the plate. Place a skewer in the middle of it, and add a basil leaf. Top with half a cherry tomato, and drizzle over some balsamic glaze: delizioso!
Note: You can buy balsamic glaze at the supermarket, but you can also make your own: Mix 1/2 cup of balsamic vinegar with 3 tablespoons brown sugar in a saucepan over medium heat, stirring constantly until sugar has dissolved. Bring to a boil, reduce heat to low, and simmer until glaze is reduced by half, about 20 minutes. Glaze should coat the back of a spoon. Let cool and pour into a jar with a lid; store in refrigerator.
