Coffee and cream roast lamb recipe with National Lamb Day

Coffee and cream roast lamb

Ingredients:

  • 1 leg or shoulder of New Zealand lamb
  • 3 white onions, cut into flat slices
  • 1 cup of black coffee 
  • 50 grams of butter 
  • 1/2 cup flour
  • 2 cups stock mixed with roast pan juices
  • 2 TBSP of cranberry jelly (or a something similar such as quince, or redcurrant jelly)
  • 1/2 cup sour cream

Method:

  • Place lamb in roasting dish on top of onion slices. Pour over a big cup of coffee (instant or espresso) and season with salt and pepper. 
  • Cook at 180°c until cooked to your liking.
    Standard cooking time: 20 minutes per kg plus an extra 15 minutes.
  • Take lamb out of oven and rest in another pan. Strain pan juices into a jug and discard onions.
  • Make a roux by melting butter in a pot, stir in flour to create a paste. Slowly add in the stock and juices, mixing until smooth, creating the gravy.
  • To the gravy, add the cranberry jelly followed by the sour cream. 
  • Serve up the lamb, delicious gravy and roast vegetables of your choice.
