Greek lamb chops recipe with National Lamb Day

Greek lamb chops
Ingredients:
- 8 New Zealand lamb chops
- 1/2 cup olive oil
- 1/4 lemon juice
- Zest of 1 lemon, minced (optional)
- 2 TSP dried oregano
- 2 TBSP fresh chopped parsley
- 8-10 cloves garlic, finely chopped
- 1 TBSP salt (or to your taste)
- 1 TSP freshly ground black pepper
Method:
- Mix all marinade ingredients together in a bowl.
- Place lamb chops into a zip top bag and pour in the marinade.
Note: Option to reserve 1/4 cup of marinade to pour over the cooked chops which adds a fresh flavour! - Remove all air from the bag, close the top and leave in fridge to marinade for at least 2 hours, up to overnight.
Note: Flip bag over every now and then to ensure marinate coats every chop. - Around 30 minutes before cooking, remove chops from fridge so they come to room temperature.
- Grill the lamb chops on a medium to high grill for 3-4 minutes per side or to your liking.
- Transfer to a platter and let them rest (if you can) for a few minutes before serving with sides of your choice.
