Lorna Riley's instant whole orange cake recipe

Quick, moist, delicious - the perfect recipe for a lazy baker like me! It also works well as muffins.
Ingredients:
- 1 big orange (skin and all)
- 185g butter, melted
- 3 eggs
- 1 cup of caster sugar
- 1½ cups of self-raising flour
Method:
- Put the whole orange in a food processor and blend until pureed. Add other ingredients, and process until well mixed.
- Pour into a greased, lined 18cm cake tin. Bake in a preheated oven at 185 degrees for 50 mins. Turn the cake out onto a rack to cool.
