Lorna Riley's instant whole orange cake recipe

Quick, moist, delicious - the perfect recipe for a lazy baker like me! It also works well as muffins.

Ingredients:

  • 1 big orange (skin and all)
  • 185g butter, melted
  • 3 eggs
  • 1 cup of caster sugar
  • 1½ cups of self-raising flour

Method:

  • Put the whole orange in a food processor and blend until pureed. Add other ingredients, and process until well mixed.
  • Pour into a greased, lined 18cm cake tin. Bake in a preheated oven at 185 degrees for 50 mins. Turn the cake out onto a rack to cool.
  • Enjoy!
