Treat yourself to a slice of Lemon Loaf bliss with this four-ingredient recipe

Start your week on a delicious note with this super simple Lemon Loaf! You're only four ingredients and 45 minutes away from enjoying a slice with your mid-morning tea.Â
And thanks to @kirbiecravings on Instagram, it is super easy to make it gluten and/or dairy-free; just switch the flour to your preferred gluten-free brand and pick up a tin of vegan condensed milk.
Ingredients:
- 3 large eggs
- 1 can condensed milk
- 1 1/4 cup self-rising flour
- 1/4 cup lemon juice + 2 tsp lemon zest
If you don’t have self-rising flour, adding 1 1/2 tsp of baking powder and 1/4 tsp of salt to 1 cup of all-purpose flour will work.Â
Method:
- Preheat oven to 170 C and line a loaf pan with baking paper.
- Whisk together eggs and milk in a large bowl until fully incorporated, then add flour and whisk until smooth.
- Add lemon juice and zest in and mix well before pouring into your pan.
- Bake for 35-45 minutes, or until a toothpick/knife comes out mostly clean.
Lemon Glaze:
- Add 1 cup powdered sugar to a small bowl and mix in 1-2 tbsp of lemon juice until you get the desired consistency.
- Ensure your cake is fully cooled before drizzling over the glaze.
